Shrimp and Veggie Stir Fry |

Shrimp sauted with feta cheese, asparagus, mushrooms, tomatoes and spinach served on a bed of pasta. Ingredients:
1 cup asparagus, chopped |
125 grams shrimp |
1 cup mushrooms |
2 1/2 cups spinach |
2 roma tomatoes, chopped |
1/4 cup feta cheese, crumbled |
1/2 clove garlic |
2 tsp olive oil |
4 tbsp lemon juice |
125 grams pasta, cooked |
Directions:
1. Saute shrimp in olive oil and garlic until almost pink. 2. Add asparagus and mushrooms, saute for a couple of minutes, then add the feta, tomatoes and spinach. saute until spinach reduces and cheese melts. 3. Serve on 1 cup cooked fettuccini. |
