I came across this recipe recently and am posting it here for safe keeping. It reads lilke a nice basic recipe...we will see! Ingredients:
1 1/2 lbs shrimp, peeled and devined |
1 tablespoon olive oil |
2 teaspoons olive oil |
1/8 teaspoon red pepper flakes |
2 tablespoons lemon juice, fresh |
3 garlic cloves, thinly sliced |
6 plum tomatoes, sliced in half lengthwise then sliced 1/2 inch thick |
2 tablespoons parsley, fresh chopped |
Directions:
1. In large skillet, heat 1 tablespoons olive oil over high heat - swirl to coat the pan. 2. Add half of the shrimp to the pan. Season with pepper and cook 3-4 minutes. 3. Transfer to a plate and cover. Repeat with the remaining 2 teaspoons olive oil and rest of shrimp. Add those to covered dish. 4. Reduce heat to medium. Add garlic and red pepper flakes. Stir in sliced tomatoes. Cook 4-6 minutes. 5. Return cooked shrimp with any accumulated juices to the pan with the tomato mixture. Add lemon juice and parsley; toss to evenly coat. Place in serving bowl. 6. Note: This may be served as is or over your choice of cooked pasta, rice, or even spinach. Any salt added to the shrimp and tomatoes would be optional. |
