Shrimp and Squash Fettuccine |

Great, sort of different use for sqaush. Ingredients:
1 cup diced butternut squash, peeled |
2 tablespoons olive oil |
12 shrimp, chopped small |
1 cup madeira wine |
8 ounces fettuccine pasta, cooked to box instructions |
1 sprig fresh thyme |
Directions:
1. Place oil in pan and saute squash over medium heat until nicely browned in a sauce pan, reduce Madeira by half (takes 5 about 5 min's). 2. Add shrimp to saute pan, saute for 2 minutes, now add reduced Madeira, thyme and butter. toss in pasta and serve. |
