Shrimp And Spinach Chowder |

This is a lovely, rich and creamy, filling soup. A keeper. I can't remember which magazine I got it from. Ingredients:
4 cups chicken broth |
3/4 cup minced onion |
3/4 cup slivered carrot |
8 cloves minced garlic |
1 lb red potatoes, cut in small wedges |
1/2 tsp pepper |
1/4 tsp nutmeg |
6 t unsalted butter |
1/4 cup flour |
1 cup milk |
8 cups fresh spinach (i used 2 bags of baby spinach) |
1/2 - 1 lb medium shrimp, peeled and deveined |
1 cup cream |
Directions:
1. Bring broth just to a boil then add next 6 ingredients and simmer for 20 minutes. 2. Melt butter over low heat; whisk in flour; whisk in milk and cook 2 minutes. Add to soup. 3. Add shrimp then spinach and cream. Heat through on very low, about 5-10 minutes. 4. May garnish with red bell pepper curls. |
