Pasta with shrimp, peppers and tomatoes Ingredients:
1 onion, medium |
2 garlic cloves, minced |
2 t. olive oil |
1 pound shrimp, medium size |
1 red pepper, medium |
1 green pepper, medium |
28 oz. tomatoes |
1/2 cup picante sauce |
1/2 cup basil |
1/2 t. oregano leaves, crushed |
1/2 lb. linguine |
Directions:
1. Cut onion into thin wedges. Mince garlic cloves. Peel and devein shrimp. Cut peppers into thin strips. Drain tomatoes. 2. Cook onion and garlic in oil in large skillet until onion 3. is tender, but not brow. Add shrimp and peppers; cook about 4 minutes or until shrimp is cooked through, stirring constantly. Add tomatoes, Picante sauce, basil and oregano. Heat through. Toss with linguine. |
