Shrimp-And-Pasta Salad -- Southern Living |

This is very light and yummy. From Southern Living. Ingredients:
8 ounces uncooked medium-size shell pasta |
3/4 cup lemon-herb dressing with mint and tarragon |
1 lb medium cooked shrimp (peeled and deveined) |
1 large nectarine, cut into thin wedges |
1 cup chopped seedless cucumber |
1/4 cup fresh raspberry (optional) |
1/2 cup fresh arugula (optional) |
Directions:
1. Cook pasta according to package directions; drain. 2. Plunge into ice water to stop the cooking process; drain and place in a large bowl. 3. Add 1/2 cup dressing, tossing to coat. 4. Stir in shrimp, nectarine, and cucumber. 5. Serve with remaining 1/4 cup dressing. 6. Garnish, if desired. |
