My sister makes these wonderful grits. She made them for dinner while we were camping once so you know they are easy to prepare. I'm truly getting a warm and fuzzy feeling just thinking about them. They are very, very good. Ingredients:
grits |
4 to 5 cups shrimp, chicken stock or water |
salt |
1 cup grits |
1 cup grated white cheddar cheese |
freshly ground black pepper |
3 green onions, thinly sliced |
sauteed shrimp |
1/2 pound thick cut bacon, diced or cut into strips |
2 tablespoons olive oil |
20 large (21 to 24 count) shrimp, shelled and deveined |
3 cloves garlic, finely chopped |
salt and fresh ground pepper |
Directions:
1. For the Grits: 2. Bring 4 cups of the stock or water and 2 teaspoons of salt to a boil over high heat. Slowly whisk in the grits and bring to a boil. Reduce the heat to medium and cook until the grits are soft about 15 to 20 minutes. If the grits become too thick, add remaining water and continue cooking until absorbed. Add the cheese and whisk until smooth. Season with salt and pepper. 3. For the Shrimp: 4. Place bacon in a pan over medium heat and cook until brown and crisp. Remove the bacon and drain. Remove all but 2 tablespoons of the bacon fat from the pan and place back on the heat. Add the olive oil and increase the heat to high. Season the shrimp with salt and pepper and cook for 1-2 minutes per side with the garlic. Stir the shrimps, olive oil and garlic into the grits. You can also stir in the green onions or put them on top of the finished dish. |
