This is high in fiber Greek influenced meal Found in an older copy of Family Circle. Ingredients:
1 cup orzo pasta |
1 (10 ounce) package frozen peas, thawed |
2 tablespoons olive oil |
1 cup sliced onion |
2 garlic cloves, chopped |
1 (16 ounce) jar marinara sauce |
1 teaspoon dried oregano |
1/2 teaspoon black pepper |
1 1/4 lbs large cleaned shrimp |
2 tablespoons lemon juice |
2 ounces feta cheese |
1 lemon, sliced |
Directions:
1. Cook orzo according to package directions. When almost done stir in the thawed peas. 2. Drain. 3. Heat 2 tbsp olive oil in nonstick pan , add onion slices and chopped garlic., cook for 3 minutes over medium heat stirring occasionally. 4. Stir in Marinara sauce and oregano and black pepper. 5. Simmer for 3 minutes add shrimp and cook for 6 minutes stirring occasionally. 6. Stir in lemon juice . 7. Spoon the shrimp mixture over the orzo. Crumble feta cheese over top and garnish with lemon slices. |
