Shrimp And Dill Deviled Eggs |

One of two deviled egg versions that are a nice change from the original. This one features the tastes of shrimp and dill; a great combo. Ingredients:
6 eggs, boiled and peeled |
1/4 c. mayonnaise |
1 - 4.5 oz. can tiny or baby shrimp, rinsed and drained |
2 tbsp. scallions (green onions), chopped |
1 tbsp. fresh dill weed, chopped |
1 tbsp. lime juice |
2 tsp. prepared dijon mustard |
1/4 tsp. hot pepper sauce (like tabasco) |
pinch fresh ground black pepper |
fresh dill weed, for garnish |
additional baby shrimp, for garnish (optional) |
Directions:
1. Slice eggs in half lengthwise, remove yolks. Set aside whites. 2. In a medium bowl, mash egg yolks with a fork. Mix in remaining ingredients, except garnish. 3. Spoon approximately 1 TBSP. egg yolk mixture into each egg white. Garnish with fresh dill weed and additional baby shrimp (if desired). Refrigerate until serving. 4. Serves 6, two halves each. |
