Prep: 10 minutes; Stand: 5 minutes. Ingredients:
1 pound peeled and deveined cooked shrimp |
2 tablespoons capers, drained |
6 tablespoons fresh lemon juice (about 2 lemons) |
2 tablespoons extravirgin olive oil |
2 garlic cloves, minced |
1 teaspoon dried oregano |
1 teaspoon hot sauce |
1/2 teaspoon salt |
1/2 cup chopped fresh parsley |
8 cups gourmet salad greens |
Directions:
1. Combine first 9 ingredients in a medium bowl. Let stand 5 minutes. 2. Place salad greens on each of 4 plates. Spoon shrimp mixture on top of greens. |
