Shrimp and Black Beans Over Brown Rice |

A good dinner, originally made with some leftovers I had plus the shrimp from the freezer. The cholesterol count on my shrimp (Maker's Mark from Sam's Club) isn't as high as the shrimp from the database. I show 115 mg (38% of RDA) versus the 165 mg listed on the shrimp from this site's database. However, the sodium on my shrimp is way higher (550 mg on mine vs. 190 on the database's). :( Ingredients:
1 cup brown rice, cooked |
1/2 cup canned black beans, rinsed |
3 oz. medium-sized frozen shrimp, cooked and cleaned |
1/2 cup frozen green peas, cooked and drained |
1/2 tsp. garlic powder |
1/2 tsp. onion powder |
1/2 tsp. chili powder |
Directions:
1. Sprinkle the spices over the rice while it is still steaming, so they will mix in (if the rice was cold, then heat it with the spices plus a tablespoon of water in the microwave for a minute). Mix in the steamed peas, shrimp, and beans (warm them separately or all together). This is sort of a fake paella and is good on the fiber side if not as good on sodium. |
