Ingredients:
1 tablespoon olive oil |
1 garlic clove, minced |
1 small onion, chopped |
1 red bell pepper, chopped |
1 (14-ounce) can artichoke hearts, coarsely chopped |
6 large eggs, lightly beaten |
1/3 cup milk |
1/2 teaspoon salt |
1/4 teaspoon freshly ground black pepper |
1/2 pound peeled and deveined cooked shrimp, coarsely chopped |
1 1/2 cups soft bread cubes |
1 (8-ounce) package cream cheese, cubed |
1 cup (4 ounces) shredded cheddar cheese |
1/4 cup chopped fresh parsley |
Directions:
1. Heat oil in a large nonstick skillet over medium-high heat. Add garlic and next 3 ingredients; cook 3 minutes or until vegetables are tender. 2. Combine eggs and next 3 ingredients in a large bowl. Stir in vegetable mixture, shrimp, and next 3 ingredients. Pour mixture into a greased 11- x 7-inch baking dish. Bake at 350ยบ for 45 minutes or until golden brown. Let stand 5 minutes. Sprinkle with parsley. |
