1 tablespoon butter |
1 cup chopped peeled granny smith apple |
3/4 cup chopped shallot |
2/3 cup chopped celery |
1 teaspoon minced garlic |
2 tablespoons all-purpose flour |
1 tablespoon curry powder |
1 1/3 cups 2% low-fat milk |
1/2 cup golden raisin |
1 (15 3/4 ounce) fat free chicken broth |
1 1/2 lbs large shrimp, peeled and deveined |
1/4 teaspoon salt (to taste) |
1/4 teaspoon fresh ground black pepper |
Directions:
1. Melt butter in a large nonstick skillet over medium-high heat. 2. Add in apple and the next 3 ingredients; stir/saute for 5 minutes or until lightly browned. 3. Stir in flour and curry powder; cook and stir for 1 minute. 4. Gradually add in milk, raisins, and broth, stirring constantly using a whisk. 5. Bring to a boil, stirring frequently. 6. Lower heat and simmer for about 5 minutes or until thick. 7. Stir in shrimp, salt, and pepper; cook 3 minutes or until shrimp are done. |
