Shredded Sweet Potato with Cumin and Scallion |

Can be prepared in 45 minutes or less. Ingredients:
1 pound sweet potatoes (about 2 medium) |
1 1/2 tablespoons vegetable oil |
1/2 teaspoon ground cumin |
1/4 cup minced scallion |
1 teaspoon fresh lemon juice, or to taste |
Directions:
1. Peel sweet potatoes and quarter length-wise. In a food processor shred sweet potatoes. 2. In a 12-inch non-stick skillet heat oil over moderately high heat until hot but not smoking and sauté sweet potatoes with cumin and salt and pepper to taste, stirring, until just tender, about 3 minutes. Stir in scallion and lemon juice. |
