This is another fantastic potato recipe that goes good with just about any main dish. Easy to make but big on flavor. Enjoy Ingredients:
8 medium potatoes washed |
2 cups shredded sharp cheddar cheese |
1/2 cup minced white onion |
1/2 teaspoon salt |
1 teaspoon freshly ground black pepper |
cooking spray |
2 cups half-and-half |
Directions:
1. Place potatoes with skins on in a large stockpot then fill pot with water to cover potatoes. 2. Bring to boiling then reduce heat to medium and cook 15 minutes. 3. Drain and let potatoes sit with cover on pot while mixing the other ingredients. 4. Preheat oven to 350. 5. In large mixing bowl combine cheese, onion, salt and pepper. 6. Shred potatoes into bowl and stir gently to combine. 7. Spray large casserole dish with cooking spray then transfer potato mixture to dish. 8. Pour half-and-half over mixture to cover but do not saturate potatoes with cream. 9. Bake 45 minutes or until golden brown and gently crisp on top. |
