Ingredients:
6 ounces cooked boneless, skinless chicken breast |
1 red bell pepper (seeded and thinly sliced) |
1 cup shredded carrots |
1 cup shredded red cabbage |
2 tablespoons chopped almonds |
1/2 cup canned mandarin oranges, drained |
1 tablespoon toasted sesame oil |
1 tablespoon low-sodium soy sauce |
1 tablespoon rice vinegar |
Directions:
1. Shred chicken into a bowl. Add bell pepper, carrots, cabbage, almonds and mandarin oranges. Drizzle with sesame oil, soy sauce and rice vinegar. Toss to coat. |
