Ingredients:
3 cups shredded carrots
3 scallions, sliced
3 tablespoons lemon juice
2 tablespoons olive oil
1/4 cup chopped fresh parsley
1/2 teaspoon salt
black pepper
Directions:
1. In a medium bowl, toss together carrots, scallions, lemon juice, olive oil, parsley, salt and pepper.
2. Cover and refrigerate up to 24 hours before serving.
