3 cups shredded carrots |
3 scallions, sliced |
3 tablespoons lemon juice |

1/4 cup chopped fresh parsley |

Directions:
1. In a medium bowl, toss together carrots, scallions, lemon juice, olive oil, parsley, salt and pepper. 2. Cover and refrigerate up to 24 hours before serving. |
