Shredded Cabbage With Bacon And Onions

wonderful hearty accompaniment to pork or corned beef or really anything
Ingredients:
1 head of cabbage outside leaves removed
1 sweet onion chopped
1 pound bacon
kosher salt black pepper to taste
2 large garlic cloves minced
Directions:
1. cut cabbage in half and cook in rapidly boiling water for 5 minutes
2. remove and cool in ice bath if possible
3. slice onions in strips
4. cut bacon in 1/2 to 1 inch pieces
5. slice cabbage in strips
6. heat wok or fry pan
7. add bacon until almost crisp
8. add onion , garlic and cabbage
9. cook on high stirring almost constantly
10. serve hot on platter...garnish with cherry tomtoes cooked for a minute in same pot to get the flavor but should look bright and fresh
