Shredded Beets With Creme Fraiche and Mint |

A delicious first course we sampled back in September at a favorite restaurant of ours. Fresh ingredients, please! Very easy. The amounts given in the ingredient's list are estimated as are the servings. Ingredients:
2 cups raw young baby red beets, shredded |
3/4 cup shredded red cabbage |
1/3 cup red onion, sliced into thin crescents |
1 tablespoon capers, undrained |
1/4 cup creme fraiche (this works ( homemade creme fraiche) |
fresh mint leaves (fresh *only*!) |
salad greens (optional) |
Directions:
1. Stir together the beets, cabbage, onion and capers in a bowl. 2. *Divide and arrange on salad plates. 3. Top each serving with a drizzle of creme fraiche and a few mint leaves. 4. *Note: If desired, serve the beet mixture on a bed of greens of your choice: mixed, arugula, etc. |
