Shortbread With Oranges and Honey |

This is a simple recipe for shortbread that is served with sliced oranges and vanilla ice cream. Ingredients:
1 cup unsalted butter, cut into pieces and chilled |
1/2 cup confectioners' sugar |
1 tablespoon orange zest, grated |
1 teaspoon vanilla extract |
2 cups flour (plus more for the work space) |
1/2 teaspoon kosher salt |
4 oranges or 8 clementines, peeled and sliced into rounds |
2 pints vanilla ice cream |
1/3 cup raw honey |
Directions:
1. Place butter, sugar, zest, extract, flour, and salt into a food processor; pulse until it comes together as a dough. 2. Place dough on floured parchment paper; roll into a 1/4 inch thick circle (trim to make pretty). 3. Cover and place on the refrigerator for 30 minutes so the dough can rest. 4. Preheat oven to 300 degrees F; place dough, on parchment paper (remove covering) on a baking sheet and and cut into 16 wedges. 5. Cook until golden, about 45 minutes; let cool. 6. Divide shortbread, orange slices, and ice cream among serving bowls; drizzle honey on the oranges and serve. |
