Shortbread And Lemon Curd Bars |

A combination of fruit and shortbread. Great with tea, coffee or a palette cleansing dessert. From the book Luscious Lemon Desserts Ingredients:
1 c flour |
1/4 c packed brown sugar |
1/2 tsp salt |
1/2 c (1 stick) butter, cut into small pieces |
1 cup lemon curd, chilled |
confectioner's sugar for dusting |
Directions:
1. Bake at 350 in center position in oven 2. 8 baking pan 3. Qhisk together the flour, brown sugar and salt 4. Cut in butter using a pastry blender until the mixture becomes coarse crumbs 5. Knead dough until it comes together 6. Press evenly into the bottom of the pan 7. Bake for 20 minutes or until light golden brown 8. Cool completely 9. Spread the lemon curd over the crust and refrigerate, loosely covered until ready to serve 10. Just before serving, lightly sift confectioner's sugar over the Lemon curd and cut into 2 pieces 11. Store in an airtight container. |
