2 tablespoons olive oil |
4 lbs beef short ribs |
1 onion, coarsely chopped |
1 (12 ounce) can tomato paste with italian spices |
2 2/3 cups water |
1/2 teaspoon salt |
ground pepper |
2 carrots, peeled and cut into 2 inch pieces |
Directions:
1. Heat oil in large saucepan over medium heat. Add ribs; cook until browned on both sides. 2. Add onion and cook for 1 minute. 3. Combine tomato paste, water, salt and pepper in small bowl. Pour over ribs; cover. 4. Simmer over low heat for 1 1/2 hours. Add carrots; simmer, covered, for additional 30 minutes or until ribs are tender. |
