Shoreline Potato Salad

Ready, Set, Cook! Special Edition Contest Entry: This cheesy salad with shrimp makes an excellent light main dish, or a side dish for seafood. Prep time here is the time to cook and cool the potatoes; cook time is chilling time.
Ingredients:
1 (20 ounce) package simply potatoes diced potatoes with onion
3/4 cup red bell pepper, diced
1/3 cup sun-dried tomato, chopped
8 ounces frozen salad shrimp, thawed and patted dry
2 hard-boiled eggs, peeled and chopped
3/4 cup mayonnaise
1/2 cup bleu cheese salad dressing
2 garlic cloves, minced
1/4 cup grated parmesan cheese
3 tablespoons cilantro, chopped (or to taste)
1 teaspoon lemon juice
1 teaspoon hot sauce (or to taste)
1/4 teaspoon sea salt (or to taste)
1/4 teaspoon fresh ground black pepper (or to taste)
2 tablespoons green olives, chopped, for garnish
Directions:
1. Cook potatoes according to instructions on package.
2. Let cool and place in a large bowl.
3. Add peppers, tomatoes, shrimp, and eggs. Stir gently to mix.
4. In a separate bowl, whisk together the mayonnaise, salad dressing, garlic, Parmesan, cilantro, lemon juice, hot sauce, salt and pepper.
5. Pour over potato mixture and mix well.
6. Cover and refrigerate at least 1 hour.
7. Garnish with chopped olives before serving.
