This version of the classic pie has delightful hints of nutmeg, ginger, cinnamon, and cloves. Ingredients:
1 (9 inch) pie shell |
1 1/2 cups all-purpose flour |
1 cup packed brown sugar |
1/4 cup shortening |
3/4 teaspoon baking soda |
1/8 teaspoon ground nutmeg |
1 pinch ground ginger |
1 pinch ground cinnamon |
1 pinch ground cloves |
1/4 teaspoon salt |
3/4 cup molasses |
3/4 cup hot water |
Directions:
1. Preheat oven to 450 degrees F (225 degrees C). 2. To Make Crumb Filling: In a medium bowl, combine flour and brown sugar. Mix well, then cut in shortening until mixture is crumbly. 3. To Make Molasses Filling: In a medium bowl, combine baking soda, nutmeg, ginger, cinnamon, cloves, and salt. Mix well, then stir in molasses. Pour in hot water and mix until smooth. 4. Sprinkle a layer of crumb filling into pastry shell. Cover with a layer of molasses filling. Alternate layers of crumb and molasses fillings, ending with crumb filling on top. 5. Bake in preheated oven for 15 minutes. Reduce heat to 350 degrees F (175 degrees C) and bake an additional 20 minutes. |
