Ingredients:
10 cups carrots (grated or shredded)
1/4 cup whole wheat flour
4 large eggs
1 tablespoon honey
1/4 teaspoon salt
3/4 teaspoon cayenne
1/2 teaspoon ground pepper
2 tablespoons olive oil
Directions:
1. In a medium bowl, combine carrots, whole wheat flour, eggs, honey, salt, cayenne and pepper. Mix well.
2. Form mixture into 6 patties.
3. In a skillet, heat oil. Add patties and cook 3-4 minutes on each side until golden brown.
