From Mom's notebooks. If using wooden or bamboo skewers, soak them in water while the meat is marinating, so they don't burn. Ingredients:
2 lbs stewing beef |
1/2 cup vegetable oil |
1/4 cup distilled vinegar |
1/4 cup chopped onion |
1 teaspoon salt |
1 dash black pepper |
2 teaspoons worcestershire sauce |
1 cucumbers or 1 zucchini, cut in 1/2-inch slices |
32 button mushrooms |
32 cherry tomatoes |
Directions:
1. Combine beef, oil, vinegar, onion, salt, pepper and worcestershire sauce in a large zip top bag. Press out as much air as possible. Refrigerate 1-3 hours. 2. Thread meat and vegetables onto 16 skewers. Grill over medium heat on all 4 sides, about 6 minutes each side. |
