A simple casserole for a busy day. I slice everything in my food processor, that really speeds things up in the prep. Great casserole for a potluck dinner and really inexpensive. Ingredients:
2 onions |
2 potatoes |
3 carrots |
1 lb ground beef |
1/2 cup rice (raw) |
1 cup celery |
1 teaspoon salt (approx.) |
1/2 teaspoon pepper (approx.) |
10 ounces tomato soup |
10 ounces water (1 can of water) |
Directions:
1. Layer sliced raw veggies into a roaster or casserole dish. 2. Sprinkle each layer with salt and pepper. 3. Pat beef on top. 4. Sprinkle rice over. 5. Add celery. 6. Mix soup and water. 7. Pour over casserole. 8. Cover with lid or foil. 9. Bake 350 2 hours or until veggies are tender. |
