Shiitake Sauté

This is a spinoff of a recipe I tried recently (Thank you Evelyn :)) The shitakes really give this recipe flavor!
Ingredients:
2 tablespoons olive oil
2 tablespoons butter
1/2 cup shiitake mushroom, coarsely chopped
1/2 cup red onion, chopped
2 garlic cloves, chopped
1/4 cup tomato, chopped
1 teaspoon fresh rosemary
1 teaspoon fresh oregano
1 teaspoon fresh thyme
salt and pepper
1 tablespoon butter (optional)
1 cup brown rice, cooked
Directions:
1. Pour the oil and butter in a medium skillet and heat. Add mushrooms and cook over medium high for about 15 minutes, then add onions, garlic and tomatoes and cook about 5 more minutes, until onions are soft.
2. Add the herbs at this point, stir and remove from heat. You may add the brown rice and mix all together or serve the mushrooms over the heated up brown rice. Salt and pepper to taste. Add the 1 tbsp butter, if you wish.
3. This is also good with a splash of soy sauce. Feel free to substitute other mushrooms!
