Walnut coated cookies with a hint of lemon and anise. Ingredients:
1/2 cup butter, softened |
1/3 cup sugar |
2 egg yolks |
1 1/2 cups walnuts, finely chopped |
1/2 teaspoon grated lemon rind |
1/4 teaspoon anise extract |
1 cup all-purpose flour |
3 tablespoons dry sherry |
Directions:
1. Preheat oven to 350. 2. Cream butter and sugar till light and fluffy. 3. Beat in egg yolks, one at a time. 4. Mix in 1/2 cup of walnuts, rind, and anise extract. 5. Add flour and sherry alternately, beginning and ending with flour. 6. Spread the remaining walnuts on a plate. 7. Drop 1-inch balls of dough into the nuts, roll, and place on ungreased cookie sheets. 8. Bake for 20-25 minutes, or until lightly browned. 9. For holiday cookies, press a sliver of candied cherry into the center of each cookie before baking. |
