After cooking for 30+ years, I look for for recipes that offer new flavor combinations. This originated as a British sandwich recipe. For your next picnic or tailgate party, double the herb butter recipe and spread it on pumpernickel bread ( instead of the meat) and top with refrigerated steak slices. Ingredients:
1 (3 lb) london broil beef, 2 to 2 1/2 inches thick |
4 tablespoons oil |
1 cup dry sherry |
1 clove garlic, minced |
1 onion |
1 teaspoon dried rosemary |
10 black peppercorns |
1/4 cup butter, softened |
2 teaspoons fresh parsley |
2 teaspoons chives, minced |
2 teaspoons dry sherry |
1 dash hot sauce |
Directions:
1. Combine marinade ingredients in a flat shallow dish. 2. Cover and marinate in the refrigerator for 8 hours or overnight, turning the meat occasionally. 3. Allow the meat to stand for one hour at room temperature. 4. Broil/grill 5- 10 mins per side, depending on your preference for doneness. 5. Spread the soft herb butter over the meat and slice across the grain. |
