This is a combination of several Shepherd's Pie recipes to suit my family perfectly...I like my mashed potatoes with plain yogurt, a stick of butter and plenty of salt and pepper. Ingredients:
2 lbs cooked ground beef |
1/4 cup butter |
1 large onion, chopped |
2 garlic cloves, minced |
1/4 cup flour |
3 cups beef broth |
6 ounces tomato paste |
2 teaspoons worcestershire sauce |
1 teaspoon oregano |
salt and pepper |
16 ounces frozen mixed vegetables |
5 cups mashed potatoes |
Directions:
1. Saute onions and garlic in melted butter. 2. Add flour. Cook for 2 minutes, stirring constantly. 3. Add beef broth, whisk vigorously to combine. Add tomato paste, Worctesterchire Sauce, Oregano, salt and pepper. Cook until thickened, stirring often. 4. Add mixed veggies, reduce heat to simmer for another 5 minutes. 5. Pour mixture into 9 by 13 pan. 6. Top with mashed potatoes. 7. Bake for 20 minutes at 400 degrees. |
