This is an easy ricotta and pasta side dish from Italy. Easily doubled to serve more! Ingredients:
1/2 cup ricotta cheese |
1/3 cup milk |
2 tablespoons chopped parsley |
1/4 teaspoon salt |
1 dash pepper |
2 tablespoons grated parmesan cheese or 2 tablespoons romano cheese |
5 ounces hot cooked pasta (we like spaghetti) |
Directions:
1. In a small saucepan combine ricotta, milk, parsley, salt and pepper. 2. Cook and stir about 3 minutes or until heated through. 3. Toss ricotta mixture and parmesan with pasta until coated. 4. Serve immediately. |
