Specialty Recipe from Sundance Trail Guest Ranch, Red Feather Lakes, CO. Ingredients:
2 tuna steaks |
1/4 cup cajun seasoning |
1 cup heavy cream |
1/4 cup dijon mustard |
2 tablespoons butter |
salt, to taste |
fresh ground black pepper, to taste |
Directions:
1. First coat tuna steaks with Cajun seasoning. 2. Grill until temperature of choice. 3. While grilling, combine cream, butter, mustard, and 3 tablespoons of seasoning and simmer over low heat until slightly thick. 4. When tuna is done, use sauce for dipping or spoon over top. |
