A typical breaded and fried Eggplant Parm recipe. This one is NOT calorie friendly so save it for special occasions. Ingredients:
1 large eggplant (about 400g) |
1/3 cup flour |
2 large eggs |
1 cup italian breadcrumbs |
1 cup canola oil |
4 cups (32 oz) eden organic pizza pasta sauce |
8 ounces mozzarella cheese |
4 ounces grated romano cheese |
Directions:
1. Preheat oven to 350 degrees. 2. Peel and slice eggplant lengthwise into 1/4 sheets. 3. Coat eggplant in flour, shaking off excess. Dip into beaten eggs and coat with breadcrumbs. 4. Cover a large pan with 1/4 oil and heat to medium high heat. 5. Fry eggplant until golden brown, about 1.5 - 2 minutes per side. Add more oil between batches as needed to maintain 1/4 . Place fried eggplant onto paper towel lined sheet until all is fried. 6. In a rectangular baking pan start layering in this order: sauce, eggplant, sauce, mozzarella cheese, romano cheese. Continue until pan is full. 7. Bake for 20 - 25 minutes. |
