Comfort food takes on a whole new meaning with this recipe. You might want to make two if you want leftovers! ; ) Ingredients:
1 1/2 lbs. low in fat ground beef |
2 eggs |
2 t. worcestershire sauce |
1 t. garlic powder |
1 pkg. onion soup mix |
3/4 c. dry italian bread crumbs |
1 t. brown sugar |
1 (8 oz) can tomato sauce |
pinch ground pepper |
1 c. shredded mozarella cheese |
4 to 5 cups (your preference) mashed potatoes |
1/2 c. shredded cheddar cheese |
Directions:
1. Preheat your oven to 350 degrees. Spray a large bread pan with a non-stick cooking spray. Mix ground beef with the eggs, Worcestershire sauce, garlic powder, package of onion soup mix, Italian bread crumbs, brown sugar, tomato sauce and pepper. 2. Flatten the hamburger mixture out into a rectangle and sprinkle the mozarella cheese onto it. Roll the hamburger up jelly roll style and put into bread pan. 3. Bake for 1 hour. Remove from oven and put mashed potatoes on top of meatloaf. Sprinkle cheddar cheese on top of potatoes. Return mearloaf to oven for another 20 minutes. Remove meatloaf from oven and use baster to remove excess grease in sides of pan before cutting. Also, check temperature in center of meatloaf for doneness before cutting. The temperature should be about 150 to 155 degrees. 4. **Note**- When doing the final baking with the mashed potatoes on top, make sure to put foil or baking sheet underneath bread pan to catch excess. : ) |
