Shami kebabs or patties may be the best kebabs in the World. They can be made in advance, frozen and fried when needed. This pan-fried kabab can be made with goat meat/mutton or lamb or beef but tastes best when made with mutton or lamb. Read more . Serve it with Mint-Coriander Chutney. Ingredients:
1 lb mutton, lean finely minced |
3/4 tsp. corianders |
1 tsp. ground turmeric |
1/2 tsp. gound ginger |
1/2 tsp. ground chillies |
1/2 tsp. ground poppy seeds |
pinch of.. ( each) cinnamon, cardamon |
1 tsp shreded coconut |
salt and pepper |
2 onions chopped |
2 garlic, finely minced |
3 tbsp lemon juice . |
Directions:
1. Make a mixture of met and spices list above. 2. In a stew pan heat the ghee and fry lightly th onions and the garlic. 3. Dd this to the above mixure, stir well and cookslowly for about 10 -15 min. Turn out on a platter, let cool, and then, either grind it or pound it to a past with a squeeze of lemon juice. 4. Form into oval cutlets and fry in the usual way, or press onto metal sewers and grill, basting well. |
