patties with ground lamb and split peas - a middle eastern alternative to burgers. Ingredients:
1.03 lbs ground lamb |
1 cup split peas |
1 egg |
0.33 cup safflower oil |
1 1/2 tsp turmeric powder |
1/2 tsp cumin |
1 tsp salt |
Directions:
1. Boil the split peas with water till they cook to a thick paste. (start with a cup of water but keep checking so they don't burn or dry out.) 2. When splitpea paste is cool, mix with ground lamb, egg and seasoning to form a doughy mixture. 3. Heat oil in a skillet - better take a longer time over a slow flame to reduce burning while ensuring HOT oil. 4. Working with wet hands, take a handful of the mixture and shape into small patties about a 1/2 inch thick. 5. Make a hole in the middle with little finger or end of wooden spoon. They should look like flat doughnuts. This helps patties cook evenly. 6. gently lay them in skillet, and let them brown on one side. About 10 minutes on low flame. Then turn over, and give another 5 minutes. serve with salad! |
