Shaker Lemon Pie from Ohio |

This recipe reached us through a 1979 cookbook published by the Cape Cod National Seashore Women's Club. Ingredients:
2 large lemons, sliced paper thin |
2 cups sugar |
4 eggs, beaten well |
prepared two crust pie crust |
Directions:
1. Mix together the lemon slices and the sugar and let this stand for two hours. 2. After two hours add the beaten eggs. 3. Pour the mixture into a prepared pie crust and top with the second crust. 4. Bake in a preheated 450 degree F oven for 15 minutes, then reduce the heat to 375 degrees F and bake for a further 20 minutes. |
