I can't even remember where I learned this trick but it's an easy peasy one and I thought I would share it. Whenever I tend to have a lot of left-over mashed potatoes, I just roll them up into little balls, and turn them into these. Read more . If I don't want to use them right away I freeze them on a cookie sheet in the freezer over night (put down a layer of plastic wrap or tinfoil on the cookie sheet first) and then put them in a freezer bag for another day. You could totally add more goodies to them, eg. cheese, sauteed onion, etc. The ideas are endless. Enjoy! Ingredients:
leftover mashed potatoes |
shake n' bake coating mix |
Directions:
1. Roll mashed potatoes into little balls slightly smaller than a golf ball. 2. Roll them in Shake n' Bake mixture. 3. Put them on a greased cookie sheet. 4. Bake for 30 minutes at 375F. 5. Nice served with a little dab of butter! :) |
