Made this for my husband and myself the other night. Simple, satisfying, delicious, and romantic. Pulled it off (the recipe) in about 25 minutes. Ingredients:
for the scallops |
1/4 lb of fresh large sea scallops (about 8) |
1/4 tsp salt, pepper, parsley, garlic powder, onion powder |
dash of cayenne pepper and crushed red pepper |
4-6 slices of bacon |
1 lime |
1/2 stick of butter |
for the pasta |
1 large jersey tomato-if you've had had one you'll know why |
4 fresh basil leaves |
4 cloves of garlic |
1/4 cup of light or mild olive oil |
1/4 lb of pasta linguini (semolina or wheat) |
salt and pepper to taste |
Directions:
1. Rinse scallops and place them in a plastic ziploc bag. 2. Add seasonings listed for scallops and juice of half the lime to bag and refrigerate. 3. Boil salted water for pasta. 4. Cook the bacon on low until halfway done. 5. While the bacon is cooking, in a medium saute pan crush the cloves of garlic with a garlic press or finely mince, cut tomato in slices and then the slices in half horizontally, stack and roll basil leaves and finely chop, add olive oil and salt and pepper and let sit in pan. 6. Pre-heat oven or toaster oven( its the perfect size for this dish) to broil. 7. The bacon should be done at this point, drain it on a paper towel. 8. Add Pasta to boiling water and cook half way. Pasta should be limp but still hard, if you catch my drift. 9. Remove scallops from fridge and wrap with bacon, reserve the marinade. Secure the scallops by piercing the bacon and the scallop through the center with a toothpick, set scallops on broil pan covered with foil and a spray of cooking spray, broil for 7-10 minutes, juice will run from scallops and bacon will be crisp. 10. While the scallops are cooking, set your saute pan to medium heat and begin to cook the tomatos, garlic, oil, and basil. This will only take a couple of minutes! Add the pasta directly from the water to the saute pan and add a ladleful of pasta water. Reduce heat to low and cover, stirring once or twice for about 5-7 minutes. 11. While the pasta is finishing, add the 1/2 stick of butter to the reserved marinade in a small glass dish, microwave for about 30 seconds, serve with scallops for dipping. 12. At this point I like to scoop and slice a fresh avocado, dowse it with sea salt and fresh lime juice and add it to the plate, this meal is so fresh and delicious, I recommend making it when you have the time to sit and talk and enjoy all the contrasting flavors and textures.
