Vegetables in cream of something soup. You can substitute and/or add other vegetables like mushrooms and squash. Ingredients:
1 tablespoon olive oil |
1 cup celery, diced |
1 cup onion, chopped |
1 cup corn |
1 cup carrot, sliced |
1 cup green peas |
1 cup green beans |
4 oz water chestnuts, sliced |
1 can cream of mushroom soup |
1/2 cup mayonnaise |
1 cup bread or cracker crumbs |
Directions:
1. Heat olive oil in large skillet. Saute onion and celery. Remove from heat. 2. Add corn, carrots, peas, beans, and water chestnuts to skillet and mix. Add soup and mayonnaise and mix well. 3. Spread mixture in baking dish and cover with bread crumbs. Dot with butter if desired. 4. Bake at 300F until bubbly and golden brown on top. |
