This recipe goes with Coconut-Spice Cake Ingredients:
1 1/2 cups sugar |
1/4 cup plus 2 tablespoons water |
1 tablespoon light corn syrup |
dash of salt |
2 egg whites |
1 teaspoon vanilla extract |
Directions:
1. Combine first 5 ingredients in top of a double boiler; beat at low speed 30 seconds or until blended. 2. Place over boiling water; beat at high speed 7 minutes or until stiff peaks form. Remove from heat; add vanilla and beat 1 to 2 minutes or until frosting is thick enough to spread. Spread immediately on cooled cake. |
