Serves even better when held overnight. Ingredients:
8 cups shredded romaine lettuce |
1 cup frozen peas, thawed |
1 medium yellow bell pepper, diced |
1/2 cup diced onion |
1 cup cherry tomatoes, quartered |
3/4 cup fat free plain yogurt |
3/4 cup fat free mayonnaise |
2 tsp cider vinegar |
1 tsp sugar |
1/4 tsp garlic powder |
1/4 tsp salt |
1/2 cup shredded reduced fat cheddar cheese |
1/2 cup thinly sliced fresh basil |
3 strips bacon, cooked & crumbled |
Directions:
1. Place lettuce in large bowl. Layer peas, bell pepper, tomatoes, onion on top. 2. Whisk yogurt, mayo, vinegar, sugar, garlic powder and salt in medium bowl until smoot. 3. Spread dressing evenly over the top of the salad. Sprinkle with cheese, basil & Bacon. |
