Note: Next time, I would use less rice and increase the amount of tomato sauce or throw in some canned diced tomatoes. From the Minneapolis Tribune food section in the 1970s. Cost per serving: $1.15 Ingredients:
1 cup uncooked rice |
1 cup corn, drained if canned |
1 (15 ounce) can tomato sauce, divided |
1 1/4 cups water, divided |
1/4 cup finely chopped onion |
1/4 cup finely chopped green pepper |
1 lb ground beef or 1 lb ground turkey, uncooked |
salt and pepper |
4 slices bacon, cut in half, uncooked |
Directions:
1. In a two-quart casserole, with a tight-fitting lid, make layers of each of these ingredients:. 2. 1. Rice. 3. 2. Corn. 4. 3. Salt and pepper and half the can of tomato sauce, plus 3/4 cup water. 5. 4. Onion and green pepper. 6. 5. Ground beef or turkey. 7. 6. Salt and pepper, the remaining half of the tomato sauce and 1/2 cup water. 8. 7. Bacon. 9. Cover and bake in a preheated 350-degree oven for 1 hour. Uncover and bake about 30 additional minutes or until the bacon is crisp. |
