This is a recipe I haven't tried. It came from a Jemco magazine. I am thinking of removing the onions, personal preference, and changing the beef to turkey and possibly the bacon to turkey bacon. Ingredients:
1 cup uncooked rice, washed and drained |
1 cup whole kernel corn, drained |
8 ounces tomato sauce |
1/2 cup water (mixed with tomato sauce) |
1/2 cup chopped onion |
1/2 cup green bell pepper |
1 lb extra lean ground beef, uncooked and broken |
14 1/2 ounces diced tomatoes, undrained |
4 slices bacon, halved |
shredded cheese (optional) |
Directions:
1. Place ingredients in casserole dish in the order given. Cover and bake at 350 degrees for 1 hour. Uncover and cook for 30 minutes longer-until bacon is crisp. If adding cheese, do so with 15 minutes left to cook. |
