Sesame Shrimp With Fried Rice |

Picked this up from a grocery store recipe slip. Ingredients:
3/4 cup uncooked white rice |
4 tablespoons sesame oil (divided in half) |
1 lb large shrimp, peeled and deveined |
2 tablespoons teriyaki sauce |
2 teaspoons fresh lemon juice |
2 tablespoons soy sauce |
2 green onions, thinly sliced |
1 tablespoon sesame seeds |
Directions:
1. In a medium saucepan combine rice and 1.5 cups water. Bring to boiling. Reduce heat to low; simmer, covered, 20 minutes or until rice is tender and all of the water is absorbed. 2. In a large skillet heat 2 tablespoons of the sesame oil over medium-high heat. Add shrimp, teriyaki sauce, lemon juice, and salt and pepper to taste. Simmer 3-5 minutes or until shrimp are opaque. Remove shrimp and sauce from skillet; set aside. 3. Add remaining 2 tablespoons of sesame oil to skillet. Add cooked rice, soy sauce, green onions and sesame seeds; cook until browned on bottom, stirring occasionally. Once rice sticks to bottom of skillet, loosen and turn with a spatula. 4. Spoon shrimp and sauce over fried rice. Sprinkle with additional sesame seeds, if desired, and serve. |
