Sesame Quinoa Shrimp Salad |

Can be served warm or cold. I especially like this warm and normally add other seasonings, like garlic. Delish! Ingredients:
1 cup uncooked quinoa |
1 pound cooked medium shrimp, peeled and deveined |
1 yellow or red bell pepper, seeded and diced (i usually use one of each for extra veggies!) |
3 tablespoons chopped fresh cilantro |
2 green onions, minced |
2 tablespoons rice wine vinegar |
1 tablespoons sesame oil |
salt and ground black pepper |
Directions:
1. Combine quinoa and 2 cups of water in a medium saucepan. 2. Set pan over high heat and bring to a boil. Reduce heat to low, cover and cook 10 minutes until liquid is absorbed and quinoa is translucent. 3. In a separate large pan, saute peppers, shrimp, cilantro, onions, vinegar and oil until hot. 4. Stir in quinoa. Season to taste with salt and pepper (or garlic powder). |
