Sesame Noodle Soup With Vegetables |

From 1001 Low Fat Vegetarian Recipes. Ingredients:
1/2 cup sliced green onion |
4 garlic cloves, minced |
1 tablespoon sesame oil |
2 1/2 cups thinly sliced napa cabbage |
1 cup chopped red bell pepper |
1 cup julienned carrot |
1 cup sliced cremini mushrooms or 1 cup shiitake mushroom |
3 (14 ounce) cans vegetable broth |
12 ounces fresh chinese noodles |
salt and pepper |
Directions:
1. Saute green onions and garlic in sesame oil until tender, about 5 minutes. 2. Add cabbage, bell pepper, carrots and mushrooms and saute until vegetables are crisp-tender, about 5 minutes. 3. Add vegetable broth to saucepan; heat to boiling. 4. Stir in noodles; return to boiling. 5. Reduce heat and simmer, uncovered, until noodles are just tender, 1-2 minutes. Season to taste with salt and pepper. |
