I made these for gifts last Christmas. Some I left plain some I drizzled white & dark chocolate. They were delicious! It makes a lot of cookies, but you can make the logs & freeze some to bake later. I know it keeps well for at least a month & a half in the freezer. Ingredients:
2 cups butter,softened (no substitutes!) |
1-1/2 cups sugar |
1 teaspoon vanilla |
3 cups flour |
1/2 teaspoon salt |
2 cups coconut (you can use any type they all work , it just depends on how sweet your tastebuds are!) |
1 cup sesame seeds |
1/2 cup finely chopped almonds |
Directions:
1. In mixing bowl, cream butter & sugar then beat in vanilla. 2. Combine flour & salt then gradually add to creamed mixture. 3. Stir in coconut,sesame seeds & almonds. 4. Split dough into 3 pieces. shape each piece into 10 logs 5. Wrap in plastic & refridgerate at least 2 hours to firm 6. Unwrap dough cut into 1/4 slices & place 1 apart on ungreased cookie sheets. ( I used parchment paper) 7. Bake 300 degrees for 25-30 minutes till lightly browned. 8. Cool 2 minutes before removing to rack. 9. These are a very light , crispy, buttery cookie & with the addition of sesame seeds.................................oh what more can I say but give me another cup of coffee or tea either go great with them, or how about hot chocolate. (sigh) : ) |
