I think you will like this version of the chicken nugget...This is more low cal but still punches the flavor up. Ingredients:
1/3 cup coarse-grained mustard |
1/3 cup honey |
2 tablespoons lime juice |
1/4 teaspoon salt |
1/8 teaspoon pepper |
1 pound skinned boned chicken breasts, cut into 1 inch pieces |
2 egg whites |
1/2 cup sesame seeds, toasted |
1/2 cup dry breadcrumbs |
Directions:
1. Preheat oven to 350 degrees. 2. Combine first 3 ingredients in a shallow bowl; stir well and set aside. 3. sprinkle salt and pepper over chicken, and set aside. 4. Place egg whites in a bowl, and stir well. 5. Combine toasted sesame seeds and breadcrumbs into a shallow dish, and stir well. 6. Dip chicken in egg whites; dredge in sesame seed mixture. 7. Arrange chicken in a single layer on a baking sheet coated with cooking spray. 8. Bake at 350 degrees for 15 minutes, turning once. 9. Serve chicken with mustard mixture. |
